In the kitchen of Mama Irma Restaurant, traditional Peruvian cooks bring a world of ingredients together in a variety of dishes.
Fresh fish is cooked in citrus juice and spices. Shredded chicken gets mixed in a walnut and Parmesan cheese sauce. Avocados are stuffed with shrimp, potatoes and homemade mayonnaise.
But one item unites nearly everything made in Peru: peppers.
